EGGPLANT PACADI


Vankaya pachadi:

INGREDIENTS :
*2 cups chopped eggplant cubes
* 1 tomato ( chopped)
*1/2 onion (chopped)
* 8 green chillis ,
*1/2 cup methi leaves (optional)
* cilantro
* 1/2 tsp turmuric , small lime size tamarind , salt

TADKA :
*4 tbs oil
* 1 tsp cumin seeds and musturd seeds
* 1 tsp urad dal
*1 tsp chana dal
*2 red chillis
* curry leaves
*4 garlic cloves

METHOD :
.Take preassure cooker , add eggplant cubes , tomatoes , onions, methi leaves , cilantro , green chillis , tamarind , turmuric and salt then 3/4 cup of water

.Preassure cook everything until 2 wistles

.Once everything is cooked , remove lid and mash everything (with pappu gutthi)

.Heat oil in a wide pan , add cumin seeds , musturd seeds , urad dal , chanadal , redchillis , curry leaves and garlic , roast everythig until golden

. Add mashed eggplant in to the tadka pan , mix everything and sautee for 5 min on medium flame

.Adjust salt

. serve hot with rice or chapathi
